Pumpkin Oatmeal (Gluten and Refined Sugar Free; Vegan)

Many people have been asking: Where have you been? What's going on? So... an apology of sorts. Life sometimes gets away from you while you are living life. Funny how that works, isn't it?

Have no fear, my kitchen has still been buzzing the last few weeks and I've got many recipes to share. The most exciting will hopefully come within the next few weeks -- an updated version of my All-Purpose flour. This version has no starch (yea!) and even more nutritional density. I'll give you a small hint: I'm in love with Chia! What I'm finding, however, is that not all Chia is made equally and my most recent purchase isn't working quite as well. So, I'm holding off on publishing this new AP flour until I'm sure I've got all the kinks worked out.  Stay tuned....

But for now, the weather has turned colder, the wind has kicked up a bit and it's time to warm those insides up before heading out. This quick-fix breakfast, which was inspired by Jessica Seinfeld's version, packs a nutritional punch that keeps my kids satisfied and warm all morning. B'tayavon!

Banana-Chip Cookies (Gluten, Nut, Sugar, and Dairy Free)

My family loves Banana bread. A lot. An insane amount, actually. That works great for breakfast or brunch. Turn it into cake and it's a wonderful dessert.

But this week, my girls wanted cookies -- and we had some nut-free guests joining us for dinner. My traditional banana bread uses almond flour as the base so this was going to take some experimenting.

The first batch had too much coconut, the second had too much chocolate (if that's possible). But in the end, we found a combination that was just sinful. The coconut plays a very subtle flavor in the background, leaving the banana as the star of the show!

I knew I hit a home run when our non-gluten-free 9 year-old guest said, "These cookies are awesome!" And we all know how honest 9-year olds can be! B'tayavon!
