No-bake Chocolate Almond Butter Cookies (gluten and sugar free; easily made nut free; vegan)

I've complained enough about the heat this summer. I'm absolutely positive that you don't want to hear about it anymore! So, no more complaining. I'm just going to simply give you my answer to my chocolate cravings without turning on that big hot square thing in the middle of my kitchen.

Full disclaimer: These cookies may not need baking, but they do need at least eight hours to cure in the freezer. Even then, they will melt quickly in your hands and no matter how hard you try, your hands will look like a two year old's hands after you've eaten one of these. I promise, it's worth it! B'tayavon!

Ingredients:
1 cup coconut palm sugar
3 tbsp cocoa powder
3/4 cup unsweetened applesauce
2 tbsp grapeseed oil
1/2 cup almond milk (or milk of choice)
1/2 cup almond butter (or sunbutter, if you want to keep it nut free)
1 tsp vanilla extract
3 cups gluten free oats

Directions:
Place wax paper on two baking sheets.

In a saucepan combine the palm sugar and cocoa powder. Mix in the applesauce, oil, and milk. Heat under a low flame until the sugar dissolves. Add in the vanilla extract. Mix in the almond (or sun) butter and oatmeal. Mix until the butter is completed combined.

Place the mixture by the heaping tablespoon onto the wax paper. Freeze for at least eight hours. Serve right out of the freezer; these will thaw almost immediately!

Nommy nom! I love the combo of almond butter and cocoa/chocolate. I wonder if you just left off the almond milk whether they'd still melt so quickly? I'm going to try them and report back (purely for scientific research). ;)

These look great...every time I've made gluten-free no bake cookies the oats are chewy, even with quick cooking oats. Are the oats chewy in these cookies?

Hi Amy,

Thanks for writing! The oats are a little chewy, but because the cookies are frozen the chewiness is mitigated quite a bit. Ricki had the great idea of eliminating the almond milk so they don't melt so quickly, but maybe instead cooking the oats slightly in the almond milk would solve both "problems." I'll keep experimenting and keep both of you posted -- things can always get better, right ;)

Any suggestions for what to use if you have an allergy to oats? What grain would be similar?

Hi Cindy,

That's a really good question. Most grains definitely need to be cooked or they will taste bitter and have a sand-like texture. The only thing I can think of that might work -- though I admittedly haven't tried it -- is quinoa flakes. You'll likely have to play around with the proportions a little. If you try it, please let me know how it turns out!

What about using coconut butter instead of oil? Would that help to keep them more cohesive?
